Crispy Brussel Sprouts with Maple Balsamic Dressing

Roasted brussel sprouts are one of the best vegetables! If you are not a brussel sprouts fan, these may just change your mind.  Especially becuase there is bacon involved. Yes they make your house smell terrible when roasted, but they are so worth it. The only way to eat them is to get that crispy char on the outside. These Crispy Brussels Sprouts with Maple Balsamic Dressing can be roasted or air fried, but the mix ins are my favorite part!

Ingredients for Crispy Brussel Sprouts with Maple Balsamic Dressing

After the brussel sprouts are roasted, they are coated with a maple balsamic dressing. This dressing has great mix of tang from the balsamic vinegar and sweetness from the maple syrup. Both these flavors are balanced with the creaminess of yogurt and a little tahini. Then add in some fresh garlic, salt and pepper to finish it up. It is a quick and easy dressing!

The mix ins are my favorite part of these roasted brussel sprouts. Crispy bacon and brussels sprouts are just made to go together in my opinion. The saltiness of the bacon really adds lots of flavor with the maple balsamic brussel sprouts. Then, the tang and burst of flavor with the pomegranates add a surprising fresh flare to this recipe. They also add some gorgeous color to the dish. Last but not least are the roasted pistachos. I love mixing nuts with Brussels sprouts, and salty pistachios go perfectly.

These crispy brussel sprouts make a great side any time of the year, but they are also super festive with the red and green color. They have the perfect blend of salty, crispy, and slightly sweet with the maple and balsamic dressing. Brussel sprouts are one of my favorite vegetables, and these take them up to a whole new level. Crispy Brussel Sprouts with Maple Balsamic Dressing

Roasted Brussel sprouts with crispy bacon, pomegranates, and pistachios
Prep Time 15 minutes
Cook Time 40 minutes

Ingredients

  • 1 lb fresh brussel sprouts (halves)
  • 1/2 lb turkey bacon
  • 1/4 cup salted pistachios
  • 1/2 cup pomegranate seeds

Maple Balsamic Dressing

  • 1/4 cup yogurt
  • 2 tbsp maple syrup
  • 2 tbsp balsamic vinegar
  • 2 tbsp tahini
  • 2 cloves garlic chopped
  • 1/4 tsp ground pepper
  • salt to taste

Instructions

  • Line a large roasting pan with parchment paper and preheat oven to 425 degrees.
  • Chop the brussel sprouts and spread on an even layer on the roasting pan. Place in the oven for about 15-20 minutes until starting to brown.
  • Place the bacon on a separate roasting pan lined with parchment paper. Place in the oven. Let cook for about 12-20 min till desired crispness
  • In a jar, combine all the dressing ingredients together and mix till evenly combined.
  • After the brussel sprouts roast, then add half the dressing on the brussel sprouts. Mix to evenly coat Place back in the oven for another 10-20 minutes until desired crispness.
  • After bacon is brown and crispy, break/chop into small pieces.
  • Pour the brussel sprouts in a bowl and add the pomegranates, pistachios, and bacon. Pour the remaining dressing over the Brussels, mix, and ready to serve.
  • Keep leftovers in a air tight container in the fridge for 3-4 days.
