Twix is definitely my favorite candy! I already have one Twix bar recipe on my site with my peanut butter Twix. These easy no bake vegan date twix are a must try recipe for any sweet tooth. To be honest this recipe was kind of an accident. I had so many dates I bought at the asian market. After trying eating bird foods date snickers, I wanted to make my own. The problem was I did not have any peanut butter left. I did just buy some cookie butter at trader joes, and that is where the recipe started.

These vegan date twix could not be any easier to make. Plus, I love that you don’t have to bake them. So this recipe ofcourse starts with some pitted dates. The dates act as the caramel to the twix. Once the dates are pitted all you have to do is add a little cookie butter into each date. Then to add a little crunch, I put a small piece of a graham cracker in the middle. So now that we have the cookie layer, all we need is the chocolate.  I just covered the dates in some melted dark chocolate. The dates are sweet enough so I chose dark, but any chocolate you have on hand would work.

Once you have these vegan date twix made, then all you have to do is let them set. These little treats are freezer friendly. I actually recommend putting them in the fridge or freezer so the dates harden up a little. I use them just as a sweet treat, give them to friends and family, or I love putting them on charcuterie boards. I’m not even much of a date fan and I love these sweet treats. So even if you don’t like dates give these treats a try! Hope you enjoy!

These easy candy bites made from dates are stuffed with cookie butter, a graham cracker, and covered in dark chocolate

Instructions

  • Fill each date with 1/2 tsp cookie butter
  • Break up the graham cracker into little rectangles just big enough to stuff in the date.
  • Place the dark chocolate in a microwave safe bowl with coconut oil. Melt the chocolate in 15 second increments stirring between each. About 1-2 min until chocolate is smooth.
  • Drop a couple dates in the chocolate and use a fork to cover them in chocolate and scoop them out letting the excess chocolate come off. Place on a sheet of parchment paper
  • Add a sprinkle of graham cracker crumbs to garnish if desired.
  • Place the dates in the fridge to allow the chocolate to harden and ready to serve
  • Keep leftovers in an airtight container in the fridge for up to a week.
