Break up the graham cracker into little rectangles just big enough to stuff in the date.
Place the dark chocolate in a microwave safe bowl with coconut oil. Melt the chocolate in 15 second increments stirring between each. About 1-2 min until chocolate is smooth.
Drop a couple dates in the chocolate and use a fork to cover them in chocolate and scoop them out letting the excess chocolate come off. Place on a sheet of parchment paper
Add a sprinkle of graham cracker crumbs to garnish if desired.
Place the dates in the fridge to allow the chocolate to harden and ready to serve
Keep leftovers in an airtight container in the fridge for up to a week.
