Healthy Cinnamon Roll Granola

This cinnamon roll granola is one of my new favorite granola creations. It brings the flavors from a comforting warm cinnamon roll into a crispy granola. Granola has become one of my ideal go to snack and breakfast foods since starting to make my own, especially since it is so easy to prep for the week. I love the sweet airy crunch and variety of flavor to add in my yogurt. You could also eat just as is for a snack, but making it homemade allows me to prepare it a little healthier and without adding to much sugar. This granola variation has the cinnamon sugar layer as well as a creamy white chocolate frosting to act as the icing.

Ingredients

This recipe starts with a neutral base, similar to my cake batter granola of puffed rice and oats for the crunchy texture. Then I added some vanilla protein for a sweet vanilla flavor. The wet ingredients include coconut oil which ensures the granola binds together and is crispy. Then a little nut butter is added for a hint of nutty flavor. Last but not least is some maple syrup. It is a great sweetener and is perfect to bring a little hint of maple flavor to the cinnamon roll variation.

Once everything comes together, I layer half the granola on a roasting pan and then sprinkle a mixture of coconut sugar and cinnamon all over the batter. Then I top with the remaining batter to create the classic cinnamon sugar layer, which happens to be my favorite part of any cinnamon roll. After the granola is baked, I drizzle it with some creamy white chocolate to act as the icing. It adds just a hint of additional sweetness and really finishes off this cinnamon roll variation.

I love breaking this granola recipe up in large chunks, but you can make it as crumbly as you want. I paired it with a delicious yogurt bowl with some bananas and cinnamon for a satisfying breakfast.  There are endless ways to incorporate this cinnamon roll variation, and honestly it is just super addicting.  I keep it in the fridge or freezer to keep it nice and crispy. Healthy Cinnamon Roll Granola

Ingredients

  • 2 cups rolled oats
  • 4 cups puffed rice or rice crispy cereal
  • 2 scoops vanilla protein I like iheartmacros or nuzest if vegan
  • 1/4 cup coconut sugar
  • 1/3 cup ground flaxseed
  • 1 1/2 tsp cinnamon
  • 1/4 cup coconut oil melted
  • 3 tbsp cashew butter
  • 1/2 cup dairy free white chocolate I get the great value brand at walmart or nestle
  • 1/2 cup maple syrup

Instructions

  • Preheat the oven to 325 and line a large roasting pan with parchment paper
  • Mix the oats, puffed rice, ground flaxseed, and protein in a large bowl.
  • In a medium size bowl combine the coconut oil, maple syrup, and cashew butter and whisk until smooth.
  • Mix the wet ingredients into the dry ingredients until everything is evenly coated
  • In a small bowl mix the coconut sugar with the cinnamon
  • On the roasting pan, spread half the granola mixture and then sprinkle the cinnamon sugar mixture all on the top. Dollop the remaining granola mixture over the top of the cinnamon sugar and gently press down.
  • Bake for about 25 minutes until golden brown.
  • Melt the white chocolate and coconut oil in the microwave in 20 second increments until smooth. Drizzle the white chocolate over the granola mixture. Then let the granola cool completely.
  • Break the granola into pieces and store in the freezer or refridgerator for optimum crispness

Notes

If you keep your granola at room temperature or want a super crispy granola sub the coconut cream for coconut oil
