Well we all know by now I am a huge granola fan! I love it for snacking and topping on all my breakfast. This granola is extra special because it combines two of my favorite foods, chocolate and peanut butter. Once I added in some oats, it is essentially a monster cookie in granola form. Monster cookies are probably my favorite cookie with the texture and flavors. So making some granola with that inspiration sounded like an excellent idea.

Ingredients

This monster cookie granola all starts with some good ole fashion oats. Oats seem to be the base of any good granola recipe.  Then for the other main base ingredient is some rice krispie cereal.  Not a typical ingredients in granola, but I love the texture and crunch the rice krispies give to this recipe. It also lightens up the base of the granola so it is not so heavy. A little flaxseed helps the ingredients bind while also adding some nutrition.

The wet ingredients are super simple. All you need is some melted coconut oil, plenty of peanut butter, and some maple syrup. Coconut oil allows you to have some of those big chunks of granola we all love once the monster cookie granola cools. Next up is the most important ingredient in this recipe, peanut butter. Any nut butter will work, but if you truly want the monster cookie flavor then peanut butter is a must. For a little additional sweetness, maple syrup is added. I love the subtle maple flavor in this recipe. Last to go in but certainly not least is the M&M’s. This is the most essential ingredient to make this granola into monster cookie granola.

This recipe comes together in one bowl, and is super quick and easy to make. I never buy store bought granola anymore because it is seriously so easy to put together,  I typically have all the ingredients,  and I can make sure I have lots of those big clumps. Another great reason to make homeade granola is so you can control the sugar content. The last thing I want to do in the morning is start my day with a bunch of sugar. Making your own granola means you know exactly what goes in it. Plus, this granola has peanut butter and chocolate! Who would pass that up?? If you are a monster cookie lover like me, this is a must try recipe.

Monster Cookie Granola

A crispy granola with plenty of peanut butter, oats, and chocolate.
Prep Time 15 minutes
Cook Time 25 minutes
Servings 10

Ingredients

  • 2 cups rolled oats
  • 3 cups Rice Krispies can sub nuts or other grain
  • 1/4 cup ground flaxseed
  • 1/2 cup peanut butter
  • 1/3 cup coconut oil melted
  • 1/2 cup maple syrup
  • 1/2 cup M&M be sure to use vegan alternative and see notes

Instructions

  • Preheat oven to 325 and line a large roasting pan with parchment paper.
  • In a large bowl mix the dry ingredients except for M&M's till combined.
  • In a separate small bowl mix the wet ingredient till combined.
  • Add the dry ingredients into the wet ingredients and fold together till everything is evenly coated. Fold in M&M's
  • Spread on the baking sheet in a even layer and press down.
  • Bake for about 25 minutes till golden brown and remove from oven.
  • Let cool completely and break into pieces.
  • Store in fridge for up to 2 weeks.
