What is better then cookie dough and brownie batter? A no bake brookie! This means you can have the best of both worlds with these no bake brookie bars. It is a edible cookie dough layered with edible brownie batter, and let me tell you it makes for one delicious treat. It sets up in the fridge or freezer, and makes for a super easy no bake dessert.
Both the cookie dough and the brownie batter in these no bake brookie bars have similar ingredients. The biggest difference is the cocoa powder that replaces some of the flour in the brownie batter. Both the batters start with some oat flour. I love the texture of oat flour and you also get some nutritional benefits with it as well. To sweeten both batters I used monk fruit sweetener. You could also sub coconut sugar for a refined sugar free alternative. Then I added some softened butter. For this recipe I used vegan butter to make both vegan friendly. This gives both batters that well known buttery flare. Next up is a little coconut cream. I know this may sound like an interesting ingredients, but it helps keep the bars from freezing solid while also maintaining the doughs classic smooth consistency. If you have never cooked with coconut cream, it is the solid part on the top of canned coconut milk. I love adding it for a little lightness throughout the batter as well. After you mix both doughs, it is time to layer them.
I much prefer cookie dough to cookies and brownie batter to brownies. I would rather eat the whole bowl of cookie dough or brownie batter before anything is baked. This is just a personal preference, but that is why I am such a big fan of these no bake brookies. You just have to combine everything together in a bowl, press it in the pan, and be sure it sets. The hardest part is waiting for the layers to set a little bit, but if you want it super goey then eat the bars right away.
